The Forgotten Cask Cocktail & Rum Bar is an intimate rooftop bar, decked out in pirate-loving, Caribbean, island-inspired decor, perched on top of the Cauliflower Hotel in Waterloo.
It is named after the St. Luician Chairman’s Reserve Range “The Forgotten Casks”.
Ideal for one-on-ones, groups, parties & functions, this is not only fast becoming one of the hottest spots in inner-Sydney’s suburb of Waterloo, but with several spaces available to fit any requirements, this is also your next ideal location for your next function.
At 123 Botany Road, in the iconic suburb of Waterloo, stand The Forgotten Cask and The Cauliflower Hotel.
The 1838 built hotel underwent a two-stage restoration, by husband-and-wife team Justin and Pippi Drew, for over a year before launching the specialist rooftop rum bar and kitchen in 2015-2016; The Forgotten Cask.
On the ground floor, The Cauliflower Hotel has draw inspiration from an indoor out door garden bistro & also has a rock-inspired bar where patrons enjoy food and drink while listening to live music every Saturday night and the 1st Sunday of every month from 3pm. Alternatively, patrons can simply enjoy beer with friends while watching live sports on one of the many large screens.
The menu at both The Forgotten Cask and The Cauliflower Hotel offers a selection of Caribbean, South American, Mexican inspired foods such as jerk chicken and tacos, as well as traditional pub favourites, with most dishes available with gluten-free options.
Upstairs, is The Forgotten Cask; a specialised Rum and Cocktail rooftop bar and kitchen. The Forgotten Cask bar boasts a fun, laid-back, St Lucian–style, rum focused, cocktail bar with a Caribbean theme. From the palms and grass on the roof to the vintage rum posters on the walls, this bar will have patrons relaxing with a signature cocktail (some named after pirates!) and dreaming themselves to St Lucia.
This specialist rum bar offers rums handpicked from all around the world including the Caribbean such as St Lucia Distillery’s own Forgotten Casks, hence the inspired name of the bar name The Forgotten Cask.
Pippi and Justin also own Big Island Wholesalers, which has exclusive distribution rights of the Chairman’s Reserve & Clement Rhum ranges. This means that some of the rums available at The Forgotten Cask are unavailable elsewhere.
The Specialist Rum & Cocktail Bar boasts over a hundred rums and spirits from around the world, inspiring exotic signature cocktails, all accompanied by a food menu which takes inspiration from the Carribean & countries from Mexico to South America.
The cocktail bar extends to The Lounge Deck and further out to the Tropic inspired Rooftop Terrace.
