A stained-glass window spelling out Cauliflower Hotel in an art deco font is a focal point just above the top-shelf row of rum. It was once on the front door, welcoming patrons into the “gaming bar” but is now a testament to the pub’s south Sydney history, dating back to 1838. In the past two years new owners Justin and Pippi Drew have given it an impressive makeover. There’s a new menu featuring traditional fare as well dishes with a South American influence which pairs perfectly with the upstairs area, the “Forgotten Cask”, a Caribbean rum bar featuring a St Lucian distillery label, Chairmans Reserve. — Rooftop, 123 Botany Rd
